3C oats 1/2C brown sugar 2t baking pdr 1t cinnamon
1/2t salt 1C milk 1C applesauce 1 egg, slightly beaten
1t vanilla 1/2C chopped canned fruit
combine dry ingredients. stir in milk, applesauce, egg, & vanilla. fold in fruit. spread in greased 9x9 pan. bake at 350 degrees for 30-35 minutes. serve with vanilla yogurt, whipped topping or skim milk.
Oat flour crepes
1 C oat flour 2 eggs 1 1/4C milk 1/2t salt
mix all ingredients, blender works well. cook on hot, greased pan. makes 6, 8" crepes
You may add 1t xanthan gum if not staying together for flipping. I add more flour to make them thicker and smaller for hamburgers and such.
Breakfast- serve hot with apple slices, blueberries, or honey butter
Lunch- serve with sandwich fillings or cucumber and dill
